Meet Craig
Craig Wakefield’s passion for food started as a young latchkey kid, preparing crepes and fancy pasta dinners for his working parents. His formal career in food began with a degree in culinary management from George Brown College. He refined his culinary skills working in acclaimed hotel dining rooms and restaurants across Ontario including the Four Seasons Toronto. Seeking to help replicate the restaurant experience for people at home, Craig returned to school for a BSc in food science and nutrition from Ryerson University, which ultimately led to his role as a product developer for President’s Choice, Canada’s largest food brand.Craig has contributed to strategy, set specifications and overseen trials and production for hundreds of private label and branded products including ice cream, pizza, juice, soup, yogurt, pasta dishes, frozen entrees, canned goods, baby food, and beer to name just a few.
Since setting out on his own three years ago, he’s put his culinary and food science backgrounds to work for a number of companies both large and small, helping them to innovate and grow to their full potential. He has traveled the world to visit major food shows, top purveyors, and dining rooms in search of food that is innovative, trend-setting, and authentic.His success as a product developer has also landed him on television. He appeared in three President’s Choice commercials that ran nationally in Canada. He has also appeared on Breakfast Television, promoting products he developed (see attached).
Craig holds a BSc from Ryerson University, professional certificates from University of Guelph, the American Institute of Baking, and the Culinary Institute of America. He is a member of the Canadian Federation of Chefs and Cooks, Research Chefs of America, and the Canadian Institute of Food Science & Technology.
Meet Frank
Frank Maccarone’s experience in the food business started at the age of 13, when he worked as a stock boy at Ferlisi Brothers Grocers in Toronto, the kind of place where everyone was a regular and they delivered down the street. Frank’s passion for food eventually led him to Loblaws, Canada’s largest food retailer. He learned the business from the ground up, assembling store orders at one of their largest distribution centres, coordinating international traffic for their private label department, and managing product selection, budgeting, promotional activity and profitability analysis for product categories nationwide.
Prior to joining The Edible Idea, Frank served as president of a privately-owned food brokerage firm that specialized in private-label product development. He managed his own portfolio, and helped manage various food products in the Canadian and US markets whose retail value was in excess of $100 million per year.
After 30 years in the food industry, Frank’s business savvy and international experience, including domestic and global trade shows, gives him a deep understanding of the marketplace, and offers unique advantages for clients seeking to grow their business.

If you’re a retailer, he can leverage his extensive professional network in a variety of channels to find manufacturers to fit your needs.
Frank has a BA in business administration from York University, and a degree from George Brown University’s Certified Management Development Program.
Meet Basil
Basil’s passion for food has made him an integral part of The Edible Idea team. Acting as chief tasting officer, Basil insures the top level of bacon quality for our clients.
When not in the office, you may find him chasing tennis balls, protecting his family from squirrels or napping in the kitchen.
